Probably our best option for french toast. A preferred variety by breakfast restaurants. It's sweet, has a tight crumb, dense, almost cake like. It absorbs liquid like a sponge. Heavy on the sweetness and egg. It's bright yellow on the inside and very rich. It is great with sweet jams and also cheese. A Monte Cristo with challah would be divine.
